When choosing a frame, height is only one of several factors to consider. The other two equally important factors are the type of terrain and riding style. A larger size frame offers more stability, and gives you more room to move without upsetting the ride dynamics of the bike. A larger frame size will have a longer wheelbase putting the front wheel further ahead and making the bike feel more planted at higher speeds.
